ITALIAN CHICKEN SKILLET
Ingredients:
1 lb chicken breasts, cut in half
2 tsp olive oil
½ diced onion
3 cloves garlic
12 oz sliced mushroom
2 zucchini, cut into chunks
2/3 cup sundried tomatoes
2 cans fire roasted diced tomatoes
1 tsp Italian seasoning
Procedure:
In a large sauté pan warm olive oil over medium heat. Add the chicken and cook until browned and cooked through. Remove chicken and set aside. Add onions and mushrooms to pan and cook until tender. Add garlic, zucchini, and sundried tomatoes and sauté for 2 min. Transfer chicken back to pan and add diced tomatoes and Italian seasoning, making sure to spoon sauce and veggies over chicken. Cover and cook until chicken is heated through and sauce is bubbling.
