Eat the Rainbow - Color Purple
Consuming veggies and fruits that have purple/blue hues provide you with several benefits primarily to their content of an antioxidant called anthocyanin. These antioxidants help support heart health preventing clot formation and by and by helping to support a healthy blood pressure. They are also known for their benefits of lowering the risk of certain cancers. Some types of these food items include eggplant (especially the skin), blueberries, blackberries, prunes, plums, and pomegranates. Tips for increasing purple in your diet: Add blueberries and blackberries to your morning cereal or oatmeal. Make eggplant pizzas! Slice an eggplant into 1 inch circles, dip in egg and breadcrumbs. Then top with a small amount of tomato sauce and low fat shredded mozzarella cheese. This creates a low Carb pizza with antioxidant power! Make a fruit salad with your dark berries, plums, and pomegranate seeds. Top with some low fat yogurt or a squeeze of lemon.
