Chicken Burrito

This is a delicious slow cooker recipe that could not get any easier! And even my son loves it!! Not only is this recipe low in fat, it is also a good source of fiber and provides a variety of vitamins and minerals. Ingredients: 1 pkg of chicken breasts or thighs 1 bag of frozen corn 2 cans of diced tomatoes, drained 1 can of low sodium black beans, drained and rinsed 1-2 onions, chopped 1 Tbsp minced garlic 2 tsp Italian seasoning 2 tsp black pepper 2 cups brown rice, cooked Small flour tortillas (taco size) You can also add low fat sour cream, avocado, salsa, and low fat shredded cheese as desired when building your burritos. Directions: Prep the slow cooker by mixing in corn, diced tomatoes, black beans, onions, garlic, Italian seasoning, and pepper. Then add the chicken to the slow cooker and cover with the mixture (this can be done the night before and stored in the fridge overnight). Set the slow cooker to low and cook for approx. 8 hours. Remove and shred the chicken with 2 forks. Then add it back into the slow cooker, stiring to combine ingredients. Prepare the brown rice according to directions. Once complete, build your burritos by placing a few spoonful’s of brown rice into the middle of your tortilla and top it with a ¼ cup of the slow cooker mixture. Use toppings as desired
